To Do List & Some pitures of Derby Rose Garland

Had a busy day with renters and work with houses. We collected rent and looked into some sink trouble. Paid for some work our guys did for a friend’s house.

Since it was a busy day away from home I didn’t get to download the pictures from the fair on to the computer. So I will put those up hopefully tomorrow.

I have been thinking I never did put up any pictures from Derby time. Here are some pictures of the ladies making the garland of roses that the winning horse wears.

They get in there and sew each Rose by hand. All the bright gree you see will be covered.

This lady had the task of removing all of the outer petals to make sure they had a tight bud to use.

And then they give away the petals. notice the texas girl in a sweat shirt in May - It must have been mid 70's!

At the end al most done. You can see the green thread as she is sewing the rose in place.

What a long day!! My fingers would be so sore.

They are just finishing up the the ends. So pretty!

State Fair Day

I had the most wonderful day yesterday with my wonderful daughter-in-law and her Mom. We started out our day at a place called Wild Eggs. It’s an AMAZING place they are so popular here and for good reason. Who knew a place known for serving eggs could be one of the best places to eat in town! Much of there stuff is bought at the weekly Farmers Market right in there own parking lot every Saturday. Can you say Fresh!!
We do get good veggies here. The locally grown stuff is brilliant.

Today is our day to go to the fair and the concert. We are really looking forward to the concert tonight at 8PM.

Before then we the Pork Chop Revue is always a good one they really are fun, but should I enjoy watching them and how cute they are, knowing they are possibly going to be on my grocer counter in the near future? You know really, they are Sponsored by the Kentucky Pork Producers.

We will sit in on the World Champion Lumberjills and see what those girls are made of.

Can’t wait to see the Cast-Iron Chef Competition. Louisville is known for it’s restuants. We have well known places and chefs here. Wolfgang Puck and Emeril are just two who have places here. (no I’m sure they are not in this thing)

Now here is a real funny thing we went last year and we were SHOCKED shocked I tell you!! Look at this list, 4-H exhibits, FFA exhibits, Bees & Honey, Country Ham,
Dairy Products, Egg Show, Field Seed & Grain, Fruits & Nuts, Tobacco, Vegetables & Melons. Did you see Tobacco? KIDS GROW TABACCO FOR SCHOOL PROJECTS!??! My sister did cute bunnies, some have cows, Kentucky allows minors.. well you get the picture. It’s all in a room hanging in long strips kinda cool to look at. Then there is a table at the door with pamphlets warning of the dangers of smoking. The other funny thing and I’ll have to put up a picture or two is the Nuts. Plates and plates of nuts and seeds. One looks JUST like the next! How can you tell them apart? Are you kidding me? You can tell me this seed should get the Blue ribbon over that one!!?

Oh but yes Theresa I will look at the quilts, the cake decorating and of course the traditional ugly lamp contest. Then there is all the horse shows, riding and jumping, well what would be a Louisville show of sorts with out them – right?

This and That

We had an electrician over today to look into what he could do for us. The house is not have a built in microwave and we want one over the stove, so there will need to be a plug put up there. We want a toggle light switch put in for the guest bedroom so guest can turn off / on the light from inside the with both doors are closed. I need a plug that is only for my hair dryer. Right now when I turn it on it blow the breaker. All these things seem to be no problem and will be done on Friday.

Getting ourselves ready for the big day! We picked Wednesday to go to the state fair! I’m still holding out that I can get to go on Saturday too, but it is an expensive day. Here is a link to the itinerary for Wednesday. So many fun things to see and participate in.

We can’t wait to see the Cast Iron Chef competition. This is local chefs from top restaurants competing just like the show Iron Chef.

Is social networking impersonal?

Critics often complain that we are becoming a society of recluses, hidden behind computer screens, fearful of human interaction. I absolutely disagree.

There’s no question that I spend a lot of time at the computer. I use Twitter, Facebook and Blogspot, currently updating two public blogs and one private blog. Do I fear human interaction? Oh, no. I love human interaction.

Social networks have allowed me to make new friends, some of who I’ve never met face to face but who seem just as close as some I have known for years. Social networks have allowed me to keep up with what friends and family members.

When we send an e-mails or up dates to all of our friends and family members, we know exactly what we are thinking! we write the same way we talk.

When I express a need I immediately get repose of well wishers and people lifting me up in prayer. I do love that we can get a quick response, but I do love the good old fashion mail too. I love to send a card that is more personal that shows you took the time and effort. But when there is a need there is no better way to get the news out there quickly! And for this reason I blog, I have a lot of family that we have moved a long distance from. So there are no trips to the post office, no worrying about calling someone who may be sleeping or busy. Everyone can read at their own convenience.

So let the critics and the so called experts say it not good for us. But, If I of all the “I don’t like change I’m too old fashion” people can find a good purpose for it, I think we all can.

Prednisone is such a monster

I have nothing to wear. Nothing! Really nothing, nothing at all unless jogging pants and huge T-shirt are an acceptable choice for where I’m going.

This darn Prednisone is such a monster!! I was increased in my dose and then it happens so fast! Sometimes I think if I was just a big girl that would be ok and I would deal with that. But I look like a carton character of sorts. My arms and legs seems normal but my mid section is huge.

Because I had lost so much weight and was enjoying being a normal size again, this is harder than the first time. So I have been trying to find “diets”. I put it in “quotes” because I don’t know about a diet. I have just always been a healthy cook and sometimes “teased” for the lack of sugar in the house. In fact right now. We don’t have any sugar I have been meaning to buy some for about four months, but I forget because we don’t use it. Only people who come over for coffee, and I have Equal for that.

We eat our junk food when we get together with others but at home it’s usually pretty healthy. So now, I am looking for some kind extra nudge and help for what to eat when. So I started surfing the web when I cam across an article explaining how to lose weight-

Suggests eating fruit instead of ice cream, roasted chicken instead of fried…. these are all fine and dandy. Then a LOAF of bread instead of a piece of pie. I’m thinking they meant slice? Perhaps eating an entire loaf of bread isn’t the best weight loss suggestion? I don’t know, but I’ll be sure to test that theory and get back with you! I mean, I love homemade bread, and if eating a loaf is good for weight loss… well, I’ll just have to be a good little scientist and try that out!

I’m not sure even sticking to whole grains will make that work. But here I am very discouraged and praying for a way to help this get under control. The last time I went through this no matter what I did I couldn’t loose while on the prednisone.
The other problem is this also causes me to have High blood sugar, or steroid–induced diabetes. This is why I feel dizzy and fall asleep all the time.

Still looking for a “map” of what to eat at what time and how much. That I would love. I just want it to be that simple. I know asking a lot and being a bit lazy about it. But I feel I have tried it all on my own…..

I told her we sold out every single shovel we had, and then I found one more in the back room, and that several people were fighting over who would get it. Her picture doesn’t show me dancing around a pole. It’s supposed to depict me selling the last snow shovel we had at Home Depot.
From now on I will remember to check her homework more thoroughly before she turns it in.

Rice Krispies Treat Spa!

Sounds kinda Red Neck don't it? Well it is on the cheap!

I am going to make RICE KRISPIES TREATS! I haven’t had them in so long.

We are still trying to decide what tile to uses for the floor, backsplash and counter in the kitchen. The carpet in the TV room should be done in a week or so. I am going to buy paint today. Not sure we will get started on it today though.

This pain and odd sleep patterns I have been having is kicking my butt!

Before anything else today I am making myself a little spa day. Start with mani and pedi.Hubbs so good to help out there. Next up would be a facial I even have cucumber maybe I’ll slap a couple of those on my tired eyes. Top it off with a long bath, shave my legs and use a scrub all over. Ah that feels so good! Then use warm oil and end with lotion. Don't forget the candles. Only candle light will and soft music will do. All followed up with a Mojito and Phantom of the Opera, I haven’t seen it in a long long while, and I love it.

Just said goodbye to son and his friend they are leaving for Kyro Egypt for 3 weeks for business. Then he and his wife will be going to South Carolina for 1 week for a wedding. Sure am gunna miss em.

Thank you for sweet comments about the Blog. I write because it helps me remember when teacher use to say write across you forehead. I want to be sure that I can apply what I read and learn and be more accountable to myself and God by being able to refer back to it. I pray it plants seeds and God can grow something beautiful from it.

Today we will start our day by going to get rent from one of our renters. While we are in the area we plan to enjoy the river and have a picnic. Simple sandwiches no big deal, just a chance to sit outside and enjoy it.

On our way home we are going to get paint. The family room, kitchen and both bathrooms are getting a fresh coat.

Then in the afternoon we have the carpet guy coming over to measure our family room and pick out carpet. We decided we wanted the warm carpet in this room rather than hard woods like we first thought we would do. Also the Tile people are coming over to measure the kitchen and breakfast room floor & the backsplash. We will ask them if they are who we get counter tops from. If so then we will have those measured as well. Then off to pick out the tile and counters.

Is Jesus Enough?

I sometimes sing praise & worship songs or hymns and think about the beautiful relationship these people who right these songs must have with God. I was listening to music and picking songs to put onto the play list for this Blog page yesterday. Then later in the afternoon I caught myself, more like God said “REALLY?” I was singing “Your all I ever needed, Jesus… Your all I ever wanted, You are my desire, No one else will do.
In the middle of everything that is going on around us right now and I find myself ‘worrying’, what will we do, lay offs, medical situations, My dear Kevin traveling to Spain for a month, what if something happens to him? We just had an awful flood. So much was lost, from lives, to homes, even the mail. Yes the blue boxes where you put your bills in and expect the lights to stay on, those too. Thankfully the flood did not cause any harm to our part of town, but in the middle of all this is Jesus enough? Could I loose everything else and still sing praise songs? Is Jesus REALLY all I ever need?
I don’t know what’s ahead, but I know in the past when sitting face to face with a doctor more than a couple of times, and he says my chances are slim. I was very much at peace. I had no doubts or fears about dieing. But, what if instead of ‘loosing my life’, I lost all my possessions, family and friends? Can I say YES completely? I would love to, but so far I have fallen into “pity party” mode too often.
This is my desire, to trust and believe better. That alone is a problem for me. How do I not trust and believe Him completely? Do I

How could I not say YES “Jesus you are all I ever need you are all I ever want”. Until I trust and believe better, and with my whole heart want Him then I can’t even really sing “You are my desire, No one else will do”

New Kitchen Stuff

We had the refrigerator delivered Monday. Seems we will be very happy with it. It has a button for fast cool and boy did it! That was nice for changing the food over. We already love the idea of not bending over to see what is inside, everything is at eye level. Since we both drink water all day I’m thrilled to have it in the door again. Speaking of door it has an alarm to let you know when the door was left open. Nice feature, but it doesn’t understand I am reloading and this may take awhile. It also has a temp alarm in case it ever starts to not hold the preset temp. It has so much and we are thrilled with it here is a link to a picture and to read all about it if want to know more.

It going to take a job to get this installed. We didn’t have an over the range microwave so this has to be built in. This thing can do it all. Turns out even turn into a convection oven guess we could have just bout this and added more cabinets and left out the oven! Again link for a picture and to read all the magic tricks it can do.

I can’t wait to get going on this baby! We need family and friends over soon!! It isn’t visible in the picture although I think you can tell a bit but there is a center burner that is oblong. So I can use a grill on it!

Today we have the Tile people coming over to measure our kitchen and laundry room and help us decide what to do for backsplash and counter. The carpet guy is also coming. But we only have one room that needs carpet so that is really good news. The rest of the house had new when we moved in. Wow make you wonder what it must have looked like when you see what they left.

What's cooking



I decided the first meal in my new oven will be Empanadas. When my children were young and at home this was one of the meals they enjoyed helping me prepare for dinner. This is a recipe that can be made ahead of time and freeze for future use also!! So I always make it a double batch and freeze half. I usually add a salad. I also mix it up sometimes and add things like corn or fresh jalapeños what ever I have or sounds good to the filling mixture.

Prep Time: 45 minutes
Cook Time: 15 minutes

For Dough

3 cups flour
pinch of salt
2 teaspoons sugar
3 teaspoons baking powder
1/2 cup lard or shortening
3/4 cup chicken stock
1 egg
oil or shortening for frying

Preparation:
Mix the dry ingredients together. Cut in the lard with a pastry cutter or 2 knives until the mixture resembles coarse meal. Whisk egg and mix into chicken broth. Mix the broth and egg into the flour mixture and knead until dough forms. Cover and refrigerate for 30 minutes.
Lightly flour a surface and roll out dough to 1/4 inch thick. Cut into 4-inch circles for small empanadas, 5-inch for medium ones or 6-inch for large ones. Place 1 tablespoon of filling in the center of the dough circle for small empanadas, 2 tablespoons for medium and 3 tablespoons for large.

For filling

2 lbs ground beef
2 small potatoes, diced into one inch cubes and boiled until soft
1 onion, peeled and coarsely chopped
5 cloves of garlic, peeled and finely chopped
1/4 cup green olives, finely chopped
2 hardboiled eggs, coarsely chopped
1 cup beef broth
1/2 cup raisins, soaked in warm water for 1 hour (optional)
1 teaspoon oil

Sauté the onions and garlic in the oil over medium heat for 1 minute. Put the ground beef in and begin to brown. When the beef is cooked through, add in the broth, green olives, raisins and bring to a simmer. Let the liquid reduce until it's almost gone. Fold in the eggs and potatoes and place by the spoonful into your prepared empanada dough and cook accordingly.

Fold dough over to make a filled half circle and use a fork to press the edges together. Refrigerate uncooked empanadas for 3 hours.

Fry in 350 degree oil for 6-7 minutes or until golden brown.
Instead of frying, I have been baking mine for years. At 350 until golden brown. That usually takes about 20 min. remember the inside is already cooked you are only cooking the dough.

Remembering When...Our Vintage Days

The Water bed Yep I’m going to jump to the 1970’s and go with the water bed. Why and how did that come t my mind? Because I was washing the bed sheets and putting them back on. As I was trying to decide how many layers to put on for our covers my thoughts just wondered. An ADD moment.

I remember when my parents got a water bed. Once they brought it home and got the big wooden box set up and that huge plastic bag in place, it was time to fill it. They brought the garden hose in from the window and let flow. It took hours. By the time it was done it was past bedtime and the water was COLD and that made the bed COLD! This was a lot of water and in those days there weren't a lot of Fancy equipment like today to heat it in an hour. As I remember it it took days. They had every available blanket and sleeping bag we owned to place on that bed to keep the cold water from making them cold.

Ah but I do remember once that water was room temperature and all was normal and just bed sheet were needed, I loved to go nap on it. I would slowly push my leg give a gentle rock.

Humble Pie

We had to go downtown to one of the rent houses last evening. They got a leak in the bad rain we just had. Grrr Some house we can’t seem to get the fridge to work it keeps freezing up. There were homes that people were moving everything out side beds were propped up couches everything the water line was above the windows. Some places we had the water as high as the under pass. Meaning it was as deep as it is high to the freeway!!! Some places were still flooded but for the most part it had all drained off.

Today we are going to one of our lawyers. Pray we get some answers to some questions that will end with solutions.

I *SO* need a vacay! If I had gas money I would drive to DC, Texas, Oh!! Ooo, ooo, I know my all time favorite this I have always wanted to do! I would start at one end of Route 66 and drive all the way across. Very cool. Wow that’s actually way bigger than I even really need I just want a small get away. Oh Bother, Charlie Brown I’m stuck here the best I could do is take the seats our of the back of the car and put a blow up mattress and go to a KOA somewhere around here.

So I need to eat some humble pie and say what everyone else knows I sure aint perfect! I’m not being real good at “turning the other cheek” right now. I can tell because I have been waking at night thinking of some really odd behavior that could result in a night ok, years in jail. Oh heck, sure not just waking at night, yea daytime thinking too. OK?

Very hard when you have been very wronged. It really is only Christ in me that has kept me from doing anything legally or morally wrong. Wow if anyone could hear some of Trent and my “lil talks”

Make sure you Make the right friends

We have a real enemy that wants you to walk out of your life alone - without real, deep, lasting fellowship with others! This comes to mind because I am in a new home and city. I haven’t yet made the kind of friends I would call up to go to lunch or shopping. But I am so thankful for my church! Where would I be with out all the encouragement and love I get from everyone there? There is some weekly contact because we share a prayer chain through emails throughout the week.

Because, as Christians when we are walking the road alone, we’re at risk of falling and not having anyone there to grab our hand and help us back up. We’re in danger to our circumstances, temptation and feelings. The enemy loves to take our emotions twist them until we really feel hopeless. Hopeless about our jobs hopeless about our country or our family. What does he have you worrying about so much?

Scripture says that a chord of three strands is not easily broken. We need each other!
(And if one can overpower him who is alone, two can resist him. A cord of three strands is not quickly torn apart. ... A triple-braided rope is not easily broken.
Ecclesiastes 4:12
)

Are you pulling back in relationships with Christians when you are offended? Stop holding back on being vulnerable with each other. Stop pretending that every thing is ok - when it is clearly not! Stop judging each other.

Start embracing each other with the same grace that Christ gave to you! Start forgiving. Love others the way Christ loves you! Start Praying for each other Start sharing how God can and will lead you. God leads us all down paths. Some have more rocks and hills than others, that is so we can share and encourage. Your testimony is so important to non-believers, but it is also for believer. When you can share with someone the unmistakable God happenings in your life God will bless you and who ever you have shared it with will get a little deeper understanding of Gods love.

Surround yourselves with people that LOVE LOVE LOVE Jesus! So when you are unsure or when you fall down, someone is there to help you up!

This isn't just a lil Thunderstom

My tip this week

For the stove top and oven. If you have something boil over on the stove? A sprinkle of salt will absorb the juice and stop the smoking. In the oven, sprinkle a handful of table salt over a “run over” . It will stop the burned smell until you are through baking and can wash it.

The news around here

Today’s big story has been the weather. Wow I woke up early this morning due to the thunder. It was constant and the whole house was shaking. It felt like and earthquake and we were going to end up sitting in the basement.
The local channels lost their feed so there were no shows to be seen. They just had to fill in. Well what do they love to do but talk about big weather news anyway right? And did they have things to report. Boats out saving people and horses, the free way being shut down due to 2 feet of water on it, cars actually floating down the roads, and really amazing manhole covers being blown up and floating in the street because of the pressure and so much water from the drain off.
These poor people on the news after a while trying to keep finding things to talk about. I usually get a bit upset when the break into a show, you know to tell you its still raining. Well since there were no shows and they were on for hours, I actually heard someone say “It’s raining over at Waterson Park by the Zoo.” Now I wasn’t giving my full attention so I don’t know exactly what prompted her to say this. But we have been in a state of “Flood Emergency” not “Flood Warnings” the weatherman said in 14 years of doing this he has never heard of using this. Boats are rescuing people and cars are floating away as far south as New Albany IN. and as far north to Cincinnati OH. Has flash flood warning, Yep, bet it’s raining at the Zoo too!



Our area here seems to be high and dry enough. I even made it out to Wal-Mart for some Milk, Bread and diet coke. shhh, diet coke is a no no so written very small shhh.

Menu Monday

Today will be a nice 86. we don’t usually see our high until about 4 - 5pm So the Hubbs and I plan to go to the water front. Cross over to the Indiana side and have a picnic, do some reading, and maybe take a nap. I have made Ham and Cheese with brown mustard, Grapes, and Sun Chips. We have a wonderful tent like thing that lays flat in a circle when you pull it out of the bag and open it, it ‘;.,POPS’;., open all four side are mesh (one zippers) a solid bottom and solid top. It helps with bugs, shade, and privacy. I have already made dinner for tonight so we can stay the rest of the day.


This is one of those meals that when I serve it there have always been smiles all around the dinner table. You can find blackening seasoning in the grocery store, or you can make your own.

Cajun Pasta

16 ounces fettuccine pasta
1 lb smoked sausage
1 teaspoon blackening seasoning
1 (16 ounce) jar Alfredo sauce
1 teaspoon Hot Sauce - Now I just say hot sauce because I’m picky. I don’t like Tabasco or many of the hot sauces I taste the vinegar in them I like real hot flavor. So I usually put some fresh jalapeños in mine.

Cook fettuccine noodles.
Cut smoked sausage into slices.
Sprinkle with blackening seasoning.
Cook in skillet until brown.
Put into sausage stir; Alfredo, Tabasco.
HEAT.
Pour over pasta.
Toss until coated. Add a side salad

Up all Night

I woke up about 3:30 last night while I was up checking email Trent came out and said he woke to what he keeps waking to at night that sounds like the mailman. A slow driving truck. Driiives and stops, drives and stops. A truck with a loud low motor. We stepped out side on the back deck because we also saw a through the trees that a neighbor was outside on his driveway on the street behind us. We didn’t hear a sound and don’t know why he was out. We went back in I made a cup of tea and carried back to our room. I drank tea in a low lit room while we talked. When my tea was gone I laid down to go to sleep. We snuggled up and talked some more. We ended up talking until 6:50 Well, now we are tired! Do we get up and shower for church or go to sleep? We choose sleep. It was a good idea at the time, but now I really miss my time of encouragement from our Christian friends and wish we had been feed our weekly meal that fuels our soul. It makes such a difference in my week when I don’t go. In my thinking and actions I find I really rely more on my daily devotions. But of course I don’t know what our pastor can teach me.
